This weekend I’m heading to the beach with a big group of girlfriends. Our mums met at playgroup in the late 80’s and took us girls away for a weekend at the beach, and so began the yearly tradition. Even know we’re all grown up each November we find our way back to the beach for a weekend of good food, cocktails and lots of laughter.
So the bags are packed with all the necessities and since we’ll be indulging in plenty of high calorie delights I thought there’d be no harm in baking these too for the drive up…..
INGREDIENTS…
Base:
1 cup plain flour
½ cup Caster Sugar
½ cup desiccated coconut
125g butter (melted)
Topping:
250g cream cheese
400g condensed milk
½ cup lemon juice
3 teaspoons gelatine
2 tablespoons hot water
1 carton cream
5 rows and 1 square (125g) Cadbury dairy milk chocolate
INSTRUCTIONS
1. Preheat oven to 180C
2. Grease cupcake trays with a little butter
3. Combine Flour, Sugar, coconut and butter. Press mixture into the bottom third of the mini cupcake trays
4. Bake until golden
5. Beat cream until stiff and set aside
6. Beat cream cheese, lemon juice and Condensed milk
7. Dissolve gelatine in hot water and beat into the cream cheese mixture
8. Fold in the cream and melted chocolate
9. Pour over bases
10. Chill for 4 hours
11. Remove by putting a knife down one edge and slightly spining/lifting
